Ingredients

Mixed fruit
12oz
Teabags
2
Moist brown sugar (preferably muscavado)
6oz
Self raising flour
12oz
Eggs
2
Mixed cake spice
1/2 tsp
A few glazed cherrys and/or nuts (optional

 

 
 

Instructions

  1. Make the tea.
  2. Put dried fruit in the mixing bowl and cover with the tea.
  3. Leave to soak overnight
  4. Heat oven to 160C
  5. Mix sugar, eggs & spice together with the fruit
  6. Add flour and mix well.
  7. Grease a 1lb loaf tin.
  8. Put mix in tin.
  9. Bake about 1.5 h (it is ready when a skewer pushed into a cake does not come out with dough stuck on it). Dont overcook.
  10. Remove from tin & allow to cool.
  • Serve sliced like bread with slices about 1 cm thick and (optional)
  • spread with butter or similar.
