SPICED BREAD PUDDING
A DELICIOUS WAY TO USE STALE BREAD TO MAKE A LOVELY PUDDING

INGREDIENTS:

Stale bread (brown, wholemeal or even white) 8oz
Milk 1/2 pint
Mixed fruit (sultanas, raisins, chopped almonds etc) 4oz
Butter, grated 2oz
Raw brown sugar 4oz
1tbls ground mixed spice
1 egg + 4tbsp milk
ground nutmeg




Roughly break up the bread and place in a mixing bowl with the milk - leave to soak. Add the dried fruits and chopped almonds, butter, sugar and mixed spice. Beat well. Whisk together the egg and milk and add to the bread mixture. Turn into a greased shallow ovenproof dish, level the surface and sprinkle with the nutmeg. Bake in the oven at 180C (350F/mark4) for about 45mins till set. Serve hot with custard or cold.
