1cup quinoa 2 cups apple juice 1 cup raisins 1 cup chopped nuts juice of 1 lemon cinnamon to taste 2tsp vanilla extract Berries, sliced banana or maple syrup (optional) |

Place quinoa in a sieve and wash it well under cold running water. Drain and place in saucepan with 2cups of cold water. Bring to the boil, cover, lower heat, and boil gently until all the water is absorbed, and the quinoa is tender, about 15mins.
