B U T T E R M I L K
 
 

PANCAKES

INGREDIENTS:

284ml of Buttermilk (1 carton)
2 large eggs
1 cup of plain flour
1tsp bicarbonate of soda
pinch salt
2tbls caster sugar
oil to grease pan

 
 

Method: Separate the eggs and whisk the whites to light fluffy peaks with an electric mixer. Then whisk the buttermilk and the egg yolks together. Sift the dry ingredients and add to the yolk mixture, Finally fold in the beaten egg whites.
Cook as ordinary pancakes in a quite hot pan. Serve with any topping you like:- butter, lemon juice and sugar, maple syrup, chocolate spread etc. They also work well as savory pancakes if you dont add the sugar.
